Tilapia with Vermicelli and
Chunky Garden Vegetable Sauce

We often make a quick lunch with pasta topped with tilapia, which pan fries incredibly fast. This recipe is garden friendly, but feel free to sub in any leftover sauce or the canned variety.
Ingredients
- 4 3 ounce Tilapia fillets
- 4 ounces vermicelli noodles
- 1 8 ounce can tomato sauce
- 4 Roma tomatoes, chopped
- 2 jalapeno peppers, chopped
- 2 Serrano peppers, chopped
- 1 bunch fresh basil leaves, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese to top
- 1 teaspoon Cajun seasonings
Directions
- To a sauce pan, add olive oil, garlic, tomato sauce, tomatoes, peppers and basil.
- Simmer over medium heat about 1/2 hour (longer for a fuller flavor)
- Prepare noodles as directed.
- Heat a different pan to medium heat and spray with cooking oil. Add tilapia fillets and sprinkle with Cajun seasonings. Heat fish thoroughly through until white and flakey.
- Add drained noodles to a serving dish and pour sauce over the top.
Add Tilapia fillets to the top of the pasta.
- Top with Parmesan cheese and serve!
