Grilled Tilapia with Caliente Cucumber Sauce
The key to this recipe is fresh grated Parmesan cheese. Powdered cheese you buy in a plastic container won't work. If you can get a block of Parmesan and shred it yourself, you'll have the best results.

Ingredients:
- 2 tilapia filets, 8-10 ounces each
- 2 teaspoons garlic powder
- 2 teaspoons Cajun seasonings
- Olive oil
Cooking Directions:
- Preheat grill to medium heat.
- Set tilapia in a long flat dish and coat with olive oil.
- Season each with garlic and Cajun seasonings.
- Transfer the encrusted filets to a suitable grilling dish or tin foil.
- Grill about 8-10 minutes or until filets are white and flakey in the middle.
- Serve with Caliente Cucumber Sauce. See recipe below.
