Shrimp Tacos
While visiting Topsail Island in North Carolina, we picked up a good pound of fresh shrimp and whipped up a batch of shrimp tacos, served with fresh fruit. Absolutely delicious.

Ingredients
- 1 pound shrimp, peeled and deveined
- 6 corn tortillas, warmed
- 2 tablespoons chili pepper seasonings
- 1 white onion, diced
- 1-2 cups pineapple, diced
- 2 jalapeno peppers, chopped
- 1/2 cup fresh cilantro, coarsely chopped
Cooking Directions
- Add shrimp and chili pepper seasonings to a mixing bowl and toss to coat.
- Sautee the shrimp over medium flame, about 8-10 minutes, or until shrimp are completely cooked through.
- Distribute over warmed corn tortilla shells.
- Top each with cilantro, pineapple, onion and jalapeno pepper.
- Serve!
