Spicy Angel Hair Pasta with Shrimp

We love shrimp for the flavor, but also because they are low in calories yet still filling. When you’re done with this meal, you’re guaranteed to be satisfied. We’ve included an entire pound for 2 servings, which is a lot but still only adds 120 calories per serving. If you’d like to reduce the calories even further, reduce this recipe by ½ pound shrimp (shaving 120 calories from the overall total) and an ounce of angel hair pasta (shaving 60 calories total).

Spicy Angel Hair Pasta with Shrimp

Ingredients

  • 4 ounces angel hair pasta (420 calories)
  • 1 pound uncooked shrimp (240 calories)
  • 1/3 cup green peas (35 calories)
  • 2 tablespoons shredded Parmesan cheese (40 calories)
  • 1 tablespoon minced garlic (5 calories)
  • 2 teaspoons chili oil (70 calories)
  • 1 jalapeno pepper, finely minced (6 calories)

Cooking Directions:

  • Boil pasta according to specifications - about 3-4 minutes al dente. Boil longer for softer pasta.
  • While pasta is cooking, heat a sauté pan to medium. Add shrimp with a little water. Sauté until shrimp is pink and cooked through. About 3-4 minutes depending on size of shrimp.
  • Drain and add to a large pot. Add shrimp and remaining ingredients except jalapeno pepper.
  • Heat pot to medium heat. Stir to coat until cheese begins to melt.
  • Divide into two bowls. Top with minced jalapeno peppers and serve.
