Patty's Baked Bruschetta Prawns

Patty loves every ingredient in this dish, so we decided to put together a Bruchetta style shrimp recipe with garden fresh vegetables. All of the vegetables were hand picked from our garden, tossed together with olive oil and baked. We opted for large prawns, but any size shrimp will work for this particular recipe.

Patty's Baked Bruschetta Prawns

Ingredients:

  • 1 pound large uncooked prawns, shelled and deveined
  • 8 medium sized Roma tomatoes, chopped
  • 1 cup fresh basil leaves, coarsely chopped
  • 2 small white onions, chopped
  • 2 heaping teaspoons garlic, minced
  • 2 cups Cavatappi noodles
  • 4 tablespoons olive oil
  • 1 cup shredded Parmesan

Cooking Directions:

  1. Preheat oven to 350 degrees.
  2. Prepare Cavatappi noodles as directed to your preference. Transfer to a large mixing bowl.
  3. Heat a saute pan to medium heat. Add onion with 1 tablespoon olive oil.Cook about 5 minutes and transfer to mixing bowl.
  4. To the mixing bowl, add garlic, tomato, olive oil and basil. Mix well.
  5. To your saute pan, add prawns and season with cajun seasonings. Cook about 30 seconds each side.
  6. Transfer prawns to mixing bowl. Mix well.
  7. Transfer contents of mixing bowl to a large baking dish.
  8. Top with Parmesan and bake 20 minutes.
  9. Serve.
