Shrimp Baked with Feta Cheese and Chili Peppers
Shrimp is so easy to prepare, especially with fresh garden ingredients, and we're truly loving our garden this year. With plenty of jalapeno peppers, serrano peppers and cayenne peppers to choose from, this was very satisfying. Large prawns are great for this one, but feel free to use the smaller shrimp for a more budget-conscious meal. Feel free to either substitute the spicy chili peppers for milder varieties, or remove them altogether if you aren't partial to spices. Try giardiniera as a substitute as well.

Ingredients
- 2 cayenne peppers, diced
- 2 Serrano peppers, diced
- 2 jalapeno peppers, diced
- 1 pound raw shrimp, shelled
- 1 ounce fresh basil leaves, chopped
- 1 ounce fresh oregano leaves, chopped
- 2 ounces fresh parsley, chopped
- 6-8 Roma tomatoes, chopped
- 1 medium sized white onion, diced
- 4 tablespoons olive oil
- 2 tablespoons chili pepper oil
- ½ - 1 cup crumbled feta cheese depending on your tastes
Cooking Directions
- Heat a deep pan to medium heat.
- Saute onion in 1 tablespoon of olive oil about 5 minutes, or until onion is translucent.
- Add tomato, peppers and herbs and remaining 3 tablespoons olive oil.
- Reduce heat to low and simmer about 15-20 minutes to reduce the overall liquid.
- Add shrimp to sauce and simmer 2-3 minutes.
- Preheat oven to 350 degrees.
- Transfer shrimp and sauce mixture to a baking dish.
- Sprinkle with feta cheese.
- Bake 30 minutes.
- Serve!
