Seared Scallops with Mandarin Pepper Salsa

Ingredients

  • 1 lb fresh scallops
  • 1 large jalapeno pepper, Minced
  • 1 diced tomato
  • 1 6 oz can Mandarin oranges
  • chili seasoning to taste
  • cooking oil spray

Cooking Directions

  1. Slice the scallops lenghtwize in half to make them thin.
  2. Season scallops with lemon peel and your favorite chili seasoning.
  3. In a small bowl combine the jalapeno, tomato and oranges and mix well.
  4. Prepare a large frying pan over high heat, lightly oiled.
  5. Sear the scallops 1-2 minutes each side, flipping once until cooked thoroughly. Do not overcook.
  6. Serve on a plate with your favorite side. Top scallops with the salsa mixture.
