Proscuitto Wrapped Scallops
Proscuitto is perfect for wrapping scallops since the scallops cook so quickly. You can choose to use bacon instead of proscuitto, but then you would need to deep fry or fry the wrapped scallops to ensure the scallops and bacon cook evenly through. The proscuitto, however, will be ready in the same time as the scallops when baking, which is a much healthier option for preparation.

Ingredients
- 6 large sea scallops
- 4 ounces Prosciutto, thinly sliced
- ½ teaspoon sea salt
- ½ teaspoon orange peel
- ½ teaspoon ginger
- ½ teaspoon pepper
- ½ teaspoon sugar
- ½ teaspoon ground coriander
- ½ teaspoon cardamom
- ½ teaspoon cilantro
Cooking Directions
- Preheat oven to 350 degrees
- Combine all seasonings to a small mixing bowl
- Add scallops to coat with seasonings
- Wrap each scallop with a slice of Prosciutto and secure with a toothpick
- Bake 10-12 minutes
- Serve over your favorite salsa.
