Thai Salmon with Curry Butter

A very pleasant salmon dish with a distinctive Thai flair. The curry butter serves as a distinctive sauce. As it begins to melt, it keeps the salmon perfectly moist, delivering additional curry flavor.
Ingredients
- Four 6 ounce salmon steaks
- Thai seasoning to taste
- Tablespoon olive oil
- ½ stick butter, softened
- 2 teaspoons red curry paste
- ¼ cup pistachio nuts, ground
Cooking Directions
- Preheat oven to 400 degrees F.
- Add salmon steaks to a baking dish and coat with olive oil.
- Season salmon with Thai seasonings and bake 15 minutes.
- While salmon is baking, add softened butter and red curry paste to a small mixing bowl. Stir to combine.
- Transfer salmon to plates, top with curry butter and dust lightly with ground pistachio nuts.
Serve! NOTE: We served our salmon over saffron rice seasoned with extra Thai seasonings.
