Thai Salmon with Curry Butter

Thai Salmon with Curry Butter

A very pleasant salmon dish with a distinctive Thai flair. The curry butter serves as a distinctive sauce. As it begins to melt, it keeps the salmon perfectly moist, delivering additional curry flavor.

Ingredients

  • Four 6 ounce salmon steaks
  • Thai seasoning to taste
  • Tablespoon olive oil
  • ½ stick butter, softened
  • 2 teaspoons red curry paste
  • ¼ cup pistachio nuts, ground

Cooking Directions

  • Preheat oven to 400 degrees F.
  • Add salmon steaks to a baking dish and coat with olive oil.
  • Season salmon with Thai seasonings and bake 15 minutes.
  • While salmon is baking, add softened butter and red curry paste to a small mixing bowl. Stir to combine.
  • Transfer salmon to plates, top with curry butter and dust lightly with ground pistachio nuts.

Serve! NOTE: We served our salmon over saffron rice seasoned with extra Thai seasonings.
