Seared Salmon Sandwiches with Cajun Mayo
Thin salmon fillet work great for this recipe. They'll cook up fast and will remain nice and moist. As a variation, instead of Cajun mayo, try a horseradish sauce seasoned with chili powder or garlic. Delicious.

Ingredients
- 2 4-ounce salmon fillets
- 2 buns are rolls, divided
- 2 tablespoons mayonnaise
- 1 teaspoon Cajun seasonings
- 1 teaspoon garlic powder
- butter
- Spray oil
Cooking Directions
- Heat a saute pan to medium-high heat. Spray with spray oil.
- In a small mixing bowl, combine mayonnaise and Cajun seasonings. Mix well.
- Lightly butter the rolls and toast them about 2-3 minutes.
- Sprinkle salmon fillets with garlic powder and add them to the hot pan. Saute them about 1.5-2 minutes per side, or until cooked through.
- Set salmon on buns, top with Cajun mayo and serve!
