Lazy Saturday Night Pasta with Salmon

It was a rough Saturday and we wanted something quick so we could just flop down in front of the DVR with a bowl of pasta and a beer, so rather than spend too much time in the kitchen, we grabbed a jar of ready-made pasta sauce and gave it a few enhancements. This recipe is only one example of so many easy ways to make store bought pasta sauces even better. In this case, we simply added onions and red wine.
Ingredients
- 2 6-ounces salmon steaks (52 calories per ounce, 312 calories per filet)
- 1 jar of pre-made pasta sauce
- 6 ounces cooked spaghetti noodles (we used angel hair pasta)
- 2 small white onions, chopped
- 1 cup red wine
- 2 jalapeno peppers, chopped
- 1 teaspoon olive oil
Cooking Directions
- Heat a large sauce pan to medium heat and add onions and olive oil. Saute about 4 minutes, or until onion becomes translucent.
- Add red wine and raise heat to high. Bring wine to a boil and reduce by about half.
- Reduce heat and add spaghetti sauce. Cover and simmer on low about 30 minutes or longer to allow flavor to set in.
- Meanwhile, heat a separate pan to medium. Lightly coat with oil and add salmon steaks.
- Cook salmon about 12-15 minutes, or until salmon is cooked through and pink throughout. Do not overcook or salmon will become a bit too dry.
- Serve pasta sauce over noodles, top with salmon filet and chopped jalapeno peppers!
NOTE: This recipe only took about 35 minutes to prepare! Enjoy with a beer and your favorite LOST episode!
