Spicy Habanero Mustard Crusted Salmon

Extra spicy mustard makes this recipe a keeper. Our old neighbor used to make his mustard at home, and it was some of the most powerful stuff we’ve ever encountered. For this version, we’ve chosen habanero mustard for an extra kick, but you’re free to use any mustard you prefer, though plain yellow mustard probably won’t cut the mustard!
Ingredients
- 2 8-ounce salmon fillets
- ¼ cup sour cream
- 3 tablespoons habanero mustard
- 1 teaspoon lemon juice
- Cayenne pepper to taste
- Salt and pepper to taste
Cooking Directions
- Preheat oven to broil.
- Add salmon to a lightly oiled baking dish. Season with cayenne and salt/pepper to taste.
- In a mixing bowl, combine mustard, lemon juice and sour cream. Mix well.
- Top each salmon fillet with mustard mixture and broil below the flame 10-12 minutes, or until salmon is cooked through and pink in the middle.
- Serve! Goes GREAT with potatoes with parsley!
