Grilled Salmon with Orange and Roasted Peppers
A combination of roasted peppers and sweet orange segments brings out the flavor of the salmon, especially when your salmon is grilled.

Ingredients
- 2 6-ounce salmon filets
- 2 Anaheim peppers, stemmed and seeded
- 1 small Poblano pepper, stemmed and seeded
- 10 ounces orange segments
- 1 teaspoon olive oil
- Cajun seasoning to taste
Cooking Directions
- Roast your peppers in an oven, preheated by 350 degrees, by setting them on a baking dish with 1 teaspoon olive oil, coated. Bake about 20 minutes, or until skins begin to blister.
- Remove from heat and chop. Mix with orange segments and mix well. Set aside.
- Preheat grill to medium heat.
- Season salmon filets with Cajun seasonings and grill about 5-6 minutes, then flip and grill an additional 2-3 minutes, or until salmon is cooked throughout, no longer pink in the middle.
- Transfer salmon to serving plates and top with oranges-pepper combination.
- Serve!
