Baked Salmon with Salsa

Salmon is a very healthy food option, and if you're seeking a meal that is both delicious and low in calories, there are many ways to prepare your salmon meal. In this recipe, we've simply seasoned the salmon filets with chili powder, baked them, and topped them with a tasty salsa. With potatoes on the side, the meal is only 450 calories.
Ingredients
- Two 6-ounce fresh salmon filets (52 calories per ounce, 312 calories per filet)
- 4 tablespoons Mexican salsa (12 calories per tablespoon, or 48 calories total)
- 2 jalapeno peppers, sliced (4 calories per jalapeno)
- 2 medium red potatoes, sliced (110 calories per potato)
- 1 teaspoon chili powder
- Salt and pepper to taste
- Spray oil
Cooking Directions
- Preheat oven to 375 degrees.
- Lightly coat a baking dish with spray oil and add salmon. Sprinkle with chili powder and salt/pepper to taste.
- Add sliced potatoes and bake about 15-18 minutes, or until salmon is pink in the center, cooked through thoroughly.
- Spoon over each salmon filet 2 tablespoons of the salsa, then top with sliced jalapeno peppers.
- Serve.
