Avocado Topped Salmon - Madness Style
For a quick lunch, we seasoned and seared some salmon fillets, but felt like being a bit creative. We've topped many meals with a quick guacamole before, but then we thought, why not incorporate the guacamole ingredients into the dish without actually making the guacamole? The result? Delicious!

A very quick and easy way to serve salmon. Searing it first seals in the flavor and moisture.

- 1 avocado, peeled, pitted and sliced
- 2 jalapeno peppers, cut into spears (or julienned)
- 2 tablespoon fresh lime juice
- 1 tablespoon fresh cilantro, finely chopped
- 1 teaspoon grated lemon peel
- 1 teaspoon chili powder
- Salt to taste
- Spray oil
Cooking Directions
- Preheat oven to 350 degrees.
- Heat a sauté pan to high heat and add olive oil.
- Season salmon fillets with chili powder, lemon peel and salt.
- When pan is hot, add salmon fillets and sear each side, about 30-60 seconds each.
