Avocado Topped Salmon - Madness Style

For a quick lunch, we seasoned and seared some salmon fillets, but felt like being a bit creative. We've topped many meals with a quick guacamole before, but then we thought, why not incorporate the guacamole ingredients into the dish without actually making the guacamole? The result? Delicious!

Avocado Topped Salmon - Madness Style

A very quick and easy way to serve salmon. Searing it first seals in the flavor and moisture.

Ingredients

  • 2 6-ounce salmon fillets
  • 1 avocado, peeled, pitted and sliced
  • 2 jalapeno peppers, cut into spears (or julienned)
  • 2 tablespoon fresh lime juice
  • 1 tablespoon fresh cilantro, finely chopped
  • 1 teaspoon grated lemon peel
  • 1 teaspoon chili powder
  • Salt to taste
  • Spray oil

Cooking Directions

  • Preheat oven to 350 degrees.
  • Heat a sauté pan to high heat and add olive oil.
  • Season salmon fillets with chili powder, lemon peel and salt.
  • When pan is hot, add salmon fillets and sear each side, about 30-60 seconds each.
  • Transfer salmon to oven and bake an additional 10 minutes, or until salmon is cooked and pink throughout.
  • Transfer salmon to serving plates. Top each with 1/2 avocado and julienned jalapeno peppers.
  • Sprinkle with 1 tablespoon lime juice then fresh cilantro.
  • Serve!
