Asian Ginger Mahi Mahi

Ingredients
- 2 6 oz. Mahi Mahi fillets, thawed
- 3 tablespoons soy sauce
- 1 teaspoon minced garlic
- 3 tablespoons balsamic vinegar
- 3 teaspoons olive oil
- 3 tablespoons honey
- 1 tablespoon ground ginger
- salt and pepper to taste
Directions
- Stir together honey, soy sauce, balsamic vinegar, ginger, garlic and 2 tablespoons olive oil
- Season mahi mahi fillets with salt and pepper and place in shallow dish
- Pour sauce over fillets to marinate but reserve ½ cup of marinade
- Cover and refrigerate for 20 minutes
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat
- Sauté fish for 4-6 minutes on each side or until fish flakes easily
- Meanwhile boil reserved marinade to thicken to a glazed consistency
- Pour reserved marinade over fillets and serve
