Adult Mac and Cheese with Mahi Mahi

Mac and cheese for adults. This version uses plenty of seasonings, but we chose to include Mahi Mahi because it is a thicker fish full of flavor, but we also wanted to show that you don't always have to grill or broil thick fish steaks. Mahi Mahi can be served in so many different ways. Of course this recipe works great with other fish, especially Tuna, but also consider it for a quick lunch with leftover Mahi Mahi or other fish.
Ingredients
- 8 ounces Mahi Mahi, cooked and chopped
- 2 ounces spiral noodles
- 2 ounces cheddar cheese
- 1 ounce Feta cheese
- 2 Serrano pepper, chopped
- 6 asparagus spears, ends snapped off and sliced
- 1 teaspoon chili pepper oil
- 4 bay leaves, chopped
- 2 tablespoons milk or heavy cream
- 1 teaspoon Cajun seasoning
Cooking Directions
- Boil noodles to specifications and drain. Return to a large pot.
- Add all other ingredients (except for Feta cheese and Serrano peppers). Mix well until cheeses are melted.
- Distribute to 2 bowls and top with Feta cheese and chopped Serranos.
