Lobster Rolls
We discovered lobster rolls on our trip to Maine. We'd never heard of them before. We planned a trip to hike in Acadia, flew into Boston and drove up the coast to Bar Harbor (that's Baah Habah to the locals). We were dying for lobster. We walked into the first lobster joint we could find and saw them on the menu. We fell in love. We hope you enjoy this recipe.
Ingredients
- 1 1/2 pounds lobster meat, cooked and chopped
- 4 buns, split
- 1 tablespoon butter
- 4 lettuce leaves
- 2 tablespoons mayonnaise
- 1 teaspoon fresh lime juice
- 2 green onions, chopped
- 1 stalk celery, chopped
- 4 fresh basil leaves, chopped
- Hot sauce to taste
- salt and pepper to taste
Cooking Directions
- Butter the insides of your buns and line with lettuce.
- In a mixing bowl, combine mayonnaise, lime juice, hot sauce, salt and pepper. Mix well.
- Stir in green onion and celery. Toss to coat.
- Stuff the lobster filling into the buns and sprinkle with basil.
- Serve!
