Baked Haddock with Spicy Mustard Sauce

Haddock is fun, flakey, healthy white fish that bakes easily, though because it does not have a distinctive flavor, you'll need to introduce some spices to your dish. We've chosen a spicy mustard sauce that brings a bit of zing.

Baked Haddock with Spicy Mustard Sauce

Ingredients

  • 16 ounces haddock, thawed
  • Cajun seasonings to taste
  • 1 medium white onion, chopped
  • ½ cup chicken stock
  • ¼ cup cider vinegar
  • 2 tablespoons jalapeno and wine mustard
  • 1 teaspoon minced garlic
  • 1 teaspoon olive oil

Cooking Directions

  • Preheat oven to 400 degrees.
  • Add haddock to a lightly oiled baking dish and sprinkle with Cajun seasonings.
  • Bake 10 minutes, or until haddock is light and flakey.
  • Meanwhile, heat a frying pan to medium and add onion, garlic and olive oil.
  • Cook about 5 minutes, or until onion becomes translucent.
  • Add chicken stock and bring to a boil.
  • Reduce heat to low and add cider vinegar. Cook about 5 minutes.
  • Transfer mixture to a food processor or blender and process until smooth.
  • Stir in spicy mustard and mix well.
  • Serve over haddock!
