Baked Haddock with Spicy Mustard Sauce
Haddock is fun, flakey, healthy white fish that bakes easily, though because it does not have a distinctive flavor, you'll need to introduce some spices to your dish. We've chosen a spicy mustard sauce that brings a bit of zing.

Ingredients
- 16 ounces haddock, thawed
- Cajun seasonings to taste
- 1 medium white onion, chopped
- ½ cup chicken stock
- ¼ cup cider vinegar
- 2 tablespoons jalapeno and wine mustard
- 1 teaspoon minced garlic
- 1 teaspoon olive oil
Cooking Directions
- Preheat oven to 400 degrees.
- Add haddock to a lightly oiled baking dish and sprinkle with Cajun seasonings.
- Bake 10 minutes, or until haddock is light and flakey.
- Meanwhile, heat a frying pan to medium and add onion, garlic and olive oil.
- Cook about 5 minutes, or until onion becomes translucent.
- Add chicken stock and bring to a boil.
- Reduce heat to low and add cider vinegar. Cook about 5 minutes.
- Transfer mixture to a food processor or blender and process until smooth.
- Stir in spicy mustard and mix well.
- Serve over haddock!
