Grilled Chili Rubbed Lobster with Jalapeno Peppers and Mandarin Oranges

Ever wonder how to grill lobster? This recipe is certainly for you. Jalapeno peppers give lobsters the extra kick you might be searching for. Lobster is quite delicious by itself, but when you bring jalapeno peppers into the mix, you'll get that extra spice and flavor. Feel free to substitute a milder pepper for less heat, such as the Serrano or even Bell pepper.
Ingredients
- 2 jalapeno peppers, chopped
- 1 6-ounce lobster tail
- 2 tablespoons butter
- 1 tablespoons chili powder
- 1 cup mandarin oranges
Cooking Directions
- Cut the lobster tail shell down the middle and pull out the tail meat. Lay over the top. Do not separate.
- Rub the tail meat with chili powder.
- Set the tail on a medium-hot grill approximately 10 minutes, or until the lobster meat is opaque.
- In a small bowl, mix jalapeno peppers with mandarin oranges.
- Melt butter and mix with chili powder.
- To a serving plate, add the melted butter as a base.
- Add lobster and jalapeno-orange mixture.
- Serve!
