Mexican Style Crab Meat Wraps

Mexican Style Crab Meat Wraps

We took a classic crab meat rollup recipe and give it a Mexican spin. The result was a perfect lunch for the two of us. We chose to use imitation crab meat for this recipe, but it's great with fresh crab if you have it on hand. Canned crab meat is great as well. Feel free to add more jalapeno peppers if you like it spicy, or substitute them with diced green peppers for less heat.

Ingredients

  • 8 ounces cream cheese, softened
  • 8 canned crabmeat; rinsed and drained (I used imitation crab meat)
  • 1 tablespoons chili sauce
  • 1 tablespoon taco seasoning
  • 1 teaspoon hot sauce
  • 1 jalapeno pepper, diced
  • 4 slices deli ham
  • 1/2 cup Mexican style shredded cheese
  • 2 small tomatoes, sliced
  • 2 large (8-inch round) flour tortillas

Cooking Directions

  1. In a small mixing bowl, combine cream cheese, chili sauce, taco seasoning, hot sauce and jalapeno peppers. Mix well.
  2. Spread ham slices over tortillas, then spread cream cheese mixture over ham.
  3. Divide crab meat over each tortilla. Add tomato slices and cheese. Fold tortilla up into a wrap.
  4. Heat a saute pan to medium-high heat and press the wrap about 1 minute, then flip and press an additional 30 seconds or so.
  5. Slice and serve!
