Crab Tacos con Juevos
The story behind this recipe is that we were rushing down to the kitch for a quick lunch during a busy day at work and needed something quick. Often I'll make chorizo con juevos but I used up the chorizo with the homemade seafood jambalaya medley from last night. I'd never combined crab meat with egg, so figured we'd try out some seasoned crab meat in place of the chorizo. Instead of mixing the crab in with the egg, I prepared it separately. The results were better than expected.
Ingredients
- 6 ounce can of white lump crab meat
- 4 large eggs
- 1 teaspoon taco seasoning
- 6 small corn tortillas
- 6 ounces cheddar cheese, shredded
- 1 teaspoon butter
- jalapeno pepper slices for topping
- Salt and pepper to taste
- Hot sauce to taste (if desired)
Cooking Directions
- In a small pot, add crab meat and taco seasoning. Mix well and simmer on low to keep warm.
- Heat a frying pan to medium and add butter.
- Beat eggs and add to frying pan. Season with salt and pepper.
- Stir eggs frequently, about 2-3 minutes, until eggs are cooked through.
- Heat tortillas and distribute egg over each.
- Top eggs with seasoned crab meat, cheese, jalapeno slices and hot sauce as desired.
- Serve!
