Baked Catfish with Jalapeno Peppers and Sweet Jelly

This recipe calls for sweet jelly. We've used jalapeno jelly since it logically complements the jalapeno peppers and is very sweet, but you can try pineapple jam as a substitute, or feel free to experiment of course. This is a very low calorie recipe for those seeking healthy meal alternatives.

Baked Catfish with Jalapeno Peppers and Sweet Jelly

Ingredients

  • Four 4-ounce catfish fillets (150 calories each)
  • 2 tablespoons jalapeno jelly (50 calories each)
  • 1 jalapeno pepper, chopped (6 calories)
  • 1 tomato, sliced (35 Calories)
  • 2 teaspoons fresh cilantro, chopped ( 0 calories)
  • Cajun seasonings to taste
  • 2 cups broccoli, steamed (30 calories per cup)
  • Oil spray

Cooking Directions

  • Preheat oven to 350 degrees.
  • Add catfish fillets to a baking dish and spray very lightly with spray oil. Season with Cajun seasonings.
  • Bake for 15-20 minutes, or until catfish is white and flaky.
  • Divide catfish fillets over two plates, 2 fillets per plate.
  • Top each with jalapeno jelly, then fresh cilantro, sliced jalapenos and tomatoes.
  • Serve with steamed broccoli!

TOTAL CALORIES: 801 calories (400.5 per serving ) - You can reduce the calories even more by only serving 1 catfish fillet per meal for a total of about 250 calories per serving)
