Albacore Tuna Pasta with Mike's Thai Pesto Sauce

Fresh ingredients and raw peanuts are the key to this recipe mashup. We blended a traditional pesto sauce with a Thai flair to include peanuts and Thai seasonings. The result is a powerfully flavorful combination to accentuate the strong taste of tuna.

Albacore Tuna Pasta with Mike's Thai Pesto Sauce

Ingredients

  • 5 ounces fresh cooked Albacore tuna (canned tuna works great for this recipe)
  • 1 ½ cup medium pasta shells
  • 3 small potatoes peeled and chopped
  • 10-12 fresh basil leaves, chopped
  • 30 raw peanuts, shelled
  • 1 jalapeno pepper, chopped
  • 4-5 tablespoons extra virgin olive oil
  • 1 teaspoon Thai spice
  • Black pepper to taste

Cooking Directions

  1. Prepare sauce: heat a sauté pan to medium-high heat
  2. Add peanuts and potatoes with a little olive oil
  3. Sauté 10-12 minutes until peanuts are nicely roasted
  4. Prepare noodles as specified on box
  5. Transfer ½ of potato/peanut mixture to a food processor or blender
  6. Add basil, jalapeno, Thai spice, black pepper and olive oil
  7. Pulse until finely chopped or blended
  8. Return to sauté pan with remaining potato/peanut mixture
  9. Heat about 1 minute
  10. To a large serving bowl, add shells, tuna and sauce
  11. Mix well and serve
