Albacore Tuna Pasta with Mike's Thai Pesto Sauce
Fresh ingredients and raw peanuts are the key to this recipe mashup. We blended a traditional pesto sauce with a Thai flair to include peanuts and Thai seasonings. The result is a powerfully flavorful combination to accentuate the strong taste of tuna.

Ingredients
- 5 ounces fresh cooked Albacore tuna (canned tuna works great for this recipe)
- 1 ½ cup medium pasta shells
- 3 small potatoes peeled and chopped
- 10-12 fresh basil leaves, chopped
- 30 raw peanuts, shelled
- 1 jalapeno pepper, chopped
- 4-5 tablespoons extra virgin olive oil
- 1 teaspoon Thai spice
- Black pepper to taste
Cooking Directions
- Prepare sauce: heat a sauté pan to medium-high heat
- Add peanuts and potatoes with a little olive oil
- Sauté 10-12 minutes until peanuts are nicely roasted
- Prepare noodles as specified on box
- Transfer ½ of potato/peanut mixture to a food processor or blender
- Add basil, jalapeno, Thai spice, black pepper and olive oil
- Pulse until finely chopped or blended
- Return to sauté pan with remaining potato/peanut mixture
- Heat about 1 minute
- To a large serving bowl, add shells, tuna and sauce
- Mix well and serve
